Bars<\/strong><\/h2>\n<p>Level up your snack game with these vegan and Paleo-friendly, refined sugar-free, no-bake energy bars. They\u2019re a perfectly portable and tasty snack.<\/p>\n<p>Servings: 8<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/p>\n<ul>\n<li>1 \u00bd cups raw almonds<\/li>\n<li>1 cup (6 oz. bag) no-sugar-added dried apricots<\/li>\n<li>\u00bd cup unsweetened shredded coconut<\/li>\n<li>2 Tbsp. almond butter<\/li>\n<li>1 Tbsp. chia seeds<\/li>\n<li>\u00bd tsp pure vanilla extract<\/li>\n<li>\u00bd tsp cinnamon<\/li>\n<li>\u00bc tsp nutmeg<\/li>\n<li>pinch of sea salt<\/li>\n<li>1-2 Tbsp. water (add 1 Tbsp. at a time)<\/li>\n<li>For a citrus twist, add \u00bd tsp orange zest and juice from \u00bd an orange<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Directions<\/span>:<\/p>\n<ol>\n<li>Line a five-by-nine inch loaf pan with parchment paper or plastic wrap. Combine all of the ingredients in a food processor except for the water. Process on low speed for several minutes, stopping to scrape the sides of the bowl as needed.<\/li>\n<li>Ingredients will start to come together after a minute or so. If you feel the dough is too dry, add a tablespoon of water at a time and continue to process until ingredients start to stick together.<\/li>\n<li>Transfer the dough to the loaf pan and press down firmly into the bottom of the pan. Top with coconut shreds (pressing them lightly into the surface) then place the bars in the fridge for 30 minutes or the freezer for 10 minutes.<\/li>\n<li>After chilled, remove bars from pan. Cut into eight bars or squares.<\/li>\n<li>Store bars in refrigerator.<\/li>\n<\/ol>\n<p>If you want to make bites instead of bars, simply roll your dough into round, golf ball-sized balls instead.
