A little avocado mayonnaise and egg help the breading stick to your chicken\u2014and drive up that fat content.<\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<ul>\n<li>3\/4 cup pork rinds or almond flour<\/li>\n<li>1 tsp Cajun spice<\/li>\n<li>1 egg<\/li>\n<li>\u00bd avocado<\/li>\n<li>\u00bd cup mayonnaise<\/li>\n<\/ul>\n<h3><strong>Instructions<\/strong><\/h3>\n<ol>\n<li>Dry chicken and season with salt and pepper.<\/li>\n<li>In a plastic bag, combine crushed pork rinds or almond flour with desired spices to make breading. Add to a bowl.<\/li>\n<li>In a separate bowl, whisk egg, avocado, and mayonnaise.<\/li>\n<li>Coat each piece of chicken in the breading, then dredge in the egg-mayo mixture, and coat in breading again.<\/li>\n<li>Place chicken on a wire rack-topped baking sheet and bake at 425 until it reaches an internal temperature of 165 degrees.<\/li>\n<\/ol>\n<p><noscript><img data-recalc-dims=\"1\"
