(We\u2019re talking <a href=\"https:\/\/www.vitaminshoppe.com\/c\/coconut-oil\/N-cp99kv\" target=\"_blank\" rel=\"noopener\">coconut oil<\/a>-level popularity, people.) Let’s start with the basics.<\/p>\n<h3><strong>What Is It?<\/strong><\/h3>\n<p>If you\u2019re into <a href=\"https:\/\/www.vitaminshoppe.com\/blog\/2017\/02\/17\/whole30-diet\/\" target=\"_blank\" rel=\"noopener\">Whole30<\/a> or the <a href=\"https:\/\/www.vitaminshoppe.com\/blog\/2017\/03\/17\/paleo-mistakes\/\" target=\"_blank\" rel=\"noopener\">paleo<\/a> lifestyle, or if you eat a lot of Indian food (in which ghee is often used), you may already be familiar with <a href=\"https:\/\/www.vitaminshoppe.com\/c\/superfoods-groceries\/N-cp99ks\" target=\"_blank\" rel=\"noopener\">ghee<\/a>.<\/p>\n<p>Ghee is clarified butter, essentially. \u201cGhee is made by slowly melting butter and bringing it to a boil,\u201d says Lauren Harris-Pincus, M.S., R.D.N., owner of Nutrition Starring You. \u201cThe water evaporates and milk solids separate and can be strained out, leaving behind a golden liquid that solidifies when cooled.\u201d<\/p>\n<p>Ghee has a much higher smoke point than regular butter, so you can use it as a replacement for refined vegetables oils (like corn, peanut, soybean and canola oil) that are often used for pan-searing or frying, says Jim White, R.D., owner of <a href=\"https:\/\/www.google.com\/webhp?sourceid=chrome-instant&ion=1&espv=2&ie=UTF-8#q=jim%20white%20fitness\" target=\"_blank\" rel=\"noopener\">Jim White Fitness & Nutrition Studios<\/a>. (Butter will start to smoke around 250 degrees, while these oils don\u2019t smoke until around 350, according to the <a href=\"https:\/\/www.usfa.fema.gov\/downloads\/pdf\/coffee-break\/cb_fp_2015_20.pdf\" target=\"_blank\" rel=\"noopener\">U.S. Fire Administration<\/a>. If you prefer butter to oil, using ghee for high-heat cooking is a good way to avoid setting off the smoke detectors\u2026oops.)<\/p>\n<h3><strong>Is Ghee Better Than Butter?<br \/>\n<\/strong><\/h3>\n<p>While ghee gets love from many health gurus, there\u2019s no research to suggest any noteworthy benefits of ghee, says White.<\/p>\n<p>Nutritionally, ghee is a more concentrated source of fat because the milk solids and water found in unclarified butter have been removed, White explains.<\/p>\n<p>A teaspoon of ghee contains 45 calories, five grams of total fat, and three grams of saturated fat, while a teaspoon of butter contains 34 calories, four grams of total fat, and two grams of saturated fat.<\/p>\n<p>\u201cSince ghee is a source of saturated fat, it should be used in limited quantities,\u201d says White. He warns that too much saturated fat can contribute to weight gain and issues related to heart health, and that it should be limited to less than 10 percent of our daily calories.<\/p>\n<p>Harris-Pincus suggests working with a registered dietitian to manage the saturated fat elsewhere in your diet if you\u2019re interested in incorporating ghee regularly.<\/p>\n<h3><strong>A Note On Dairy<\/strong><\/h3>\n<p>Some people believe that ghee is better than butter for those with lactose intolerance or milk allergies because it\u2019s had the milk solids removed. However, ghee is still dairy-derived, so those with milk allergies still need to avoid it, says White. But since butter and ghee are both quite low in lactose, either is generally safe for someone with lactose intolerance, adds Harris-Pincus.<\/p>\n<p><strong>Related: <a href=\"https:\/\/www.vitaminshoppe.com\/search?search=ghee\" target=\"_blank\" rel=\"noopener\">An Ode To Egg Yolks\u2014Yes, You Should Be Eating Them<\/a><\/strong><\/p>\n<h3><strong>But \u2018Ghee\u2019 Sounds Cool And You Still Want To Use It!<\/strong><\/h3>\n<p>Like any fat, ghee is OK to consume in moderation. Plus, it\u2019s rich, nutty flavor can give your dishes a little more <em>oomph<\/em> than many other cooking oils.
