Nothing against Dr. Seuss, but when it comes to getting into the St. Paddy’s Day spirit, we’ll pass on the green eggs and ham. Instead, we’ll be snacking on these super-nutritious—and rather adorable—guacamole-filled deviled eggs. Give us an excuse to eat avocado and we’ll take it every single time.
Guacamole Deviled Eggs
These simple guac-filled eggs, dreamed up by blogger Kim Capella (@pbeechie), take just minutes to make—and pack protein, healthy fats, and loads of flavor. The addition of plnt brand Organic Extra-Virgin Coconut Oil adds creaminess and energizing medium-chain triglycerides.


*makes 24 deviled eggs
Ingredients
- 12 eggs, hard-boiled
- 3 ripe avocados
- 1.5 Tbsp plnt brand Extra-Virgin Coconut Oil, melted
- ½ lime, juiced
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 roma tomato, sliced
- ¼ cup fresh cilantro
Instructions
- Peel and rinse the hard-boiled eggs, then cut them in half horizontally. Remove the yolks and discard or refrigerate for use another time.
- Halve the avocados and remove the pits. Scoop the avocados into a food processor and add the melted plnt coconut oil, lime juice, sea salt, and black pepper. Pulse until desired consistency is reached.
- Add the sliced tomato and fresh cilantro and pulse a few more times to chop the tomato.
- Spoon or pipe a generous amount of guacamole into the well of each hard-boiled egg white. Top with chopped fresh cilantro and enjoy!
