  1. Preheat the oven to 350° F. In a bowl, combine the almond flour, coconut flour, and baking soda. Mix evenly. Then add the honey, coconut oil, and vanilla extract; mix thoroughly. Once all contents are combined, the mixture should be dense like cookie dough. Spray a baking sheet with nonstick spray. Roll the dough into 10 compact dough balls, pressing each one down softly onto the baking sheet to flatten. Bake at 350° F for 13-16 minutes; 13 minutes will result in a soft baked cookie, while 16 minutes will result in lightly crisped edges. Let cool 5 minutes, then enjoy!
